SMASH BBQ BURGER - The secret to having killer burgers!



A classic product like the hamburger, revisited and reimagined to awaken our taste buds: we're talking about the very trendy smash burger!

Follow the recipe to make the ultimate smash burger.



INGREDIENTS


  • Minced beef (20% fat and 80% lean)

  • Potatoes

  • Onions

  • Sliced cheese

  • Salad

  • Mayonnaise

  • Curry

  • Yogurt

  • Hamburger bun


For the sauce:

  • Carrots

  • Tomato

  • Extra virgin olive oil

  • Dry spices to taste



PREPARATION


At first glance, it might seem that the smash burger is just an invention of large fast food chains to sell the hamburger in a different way, but in reality it's not just that.

If we analyze the smash burger technically, we realize that it has characteristics that make it very interesting.


We'll be making this recipe on a Spolert , because it's perfect for cooking meat and more. In fact, for the smash burger, we'll not only use the griddle to cook the burger, but we'll also use the Spolert to prepare the side vegetables and sauce.


Let's go ahead and put a pot with some potatoes boiling in salted water on the already hot griddle.


Before proceeding with direct cooking, it's a good idea to oil the griddle using a light oil (avoiding extra virgin olive oil): this step is useful only to ensure that the heat is distributed evenly across the griddle and prevents the food from sticking.

Let's start cooking the vegetables that require the most time. We've prepared tomato slices cut into 1/2-inch slices, thickly sliced carrots, and thickly sliced onion rings.

Once the vegetables are distributed on the griddle, add a drizzle of oil and let everything brown.

We will use the carrots and tomatoes to make a sauce, while the onions will go directly into the sandwich.


The griddle must be hot enough, and we must play with the positioning of the food and the direction of the flame. For example, if onions and carrots require longer cooking, they must be kept away from the heat and turned frequently on all sides.


As with all conduction cooking methods, where there is direct heat, dry spices should be added to the food only after turning it for the first time: this will prevent it from burning due to excessive heat.

In our case, once the tomatoes are well-roasted on one side, we turn them over and season them with herbs of your choice. We season the carrots and onions with just a little salt.

Once the tomatoes and carrots are cooked, remove them from the pan and blend them, adding a little oil to achieve the perfect consistency.


The time has come for the potatoes which we will transform into smash potatoes .

All we need to do is check the soft internal consistency of the potatoes with a fork, peel them, place them on the griddle and mash them.

Let's move on to the protagonist's moment: the smash burger.

To make it, we combined a minced meat composed of 20% fatty meat and 80% lean meat. The best cut to obtain this percentage is definitely picanha .


Once the meat is minced we can create balls of 50-60 g each.

Place the meatballs on a hot, oiled griddle, spaced well apart from each other.

To smash the burgers, all you have to do is repeatedly press them with a sheet of baking paper and a burger press.


Returning to the technical aspects that really give smash burgers an extra edge, you can certainly notice that by smashing them we have a greater contact surface during cooking, which will help form a better crust, giving greater intensity of flavor thanks to a more widespread Maillard reaction.

Once turned, add a slice of soft cheese that melts easily on top.


Before plating, don't forget to cut the rolls and toast them on the grill.


At this point, we'll be managing most of the ingredients on the grill: the smash burgers, the bread, the smash potatoes, and the onions. If we've done everything right and followed all the cooking times, we'll have everything ready at the same time to assemble the sandwich.

We assemble the sandwich with a slice of bread, two smash burgers, the smash potato or onions (to create two variations, but you can also combine everything together!), some salad dressed with mayonnaise, yogurt, curry, and then finishing with the other slice of bread.


All you have to do is accompany them with the carrot and tomato sauce, to make them an even more explosion of flavor.
