It's well known that before cooking ribs, the membrane or pleura must be removed from the bone side. This tissue, called pleura, becomes stiff when cooked, ruining the final result. In this article, we'll show you how to easily remove the pleura from ribs.
When it comes to removing the pleura from ribs, there are all sorts of things to do. Some try using knives, risking tearing the membrane or, worse, hurting themselves. Others use spoon handles or improvised tools, but they're ineffective. Still, some feel like Bear Grills and try to remove it by hand. The only thing these methods have in common is difficulty and ineffectiveness.
To solve this problem, we created the SPLEURATORE® , the first patented tool specifically designed to easily remove pleura from ribs. Through years of testing and development, we've created a tool that slides across the bone, removing the pleura without breaking it and with minimal effort.
Below are the steps to follow for easy removal.
1 - Insert the SPLE URATOR®
The first step is to take the ribs (whether pork or beef) and place them on the cutting board, bone-side up. Then, insert the SPLE URATOR® under the pleura near the bone. Its shape will gradually detach the membrane without breaking it.

2 - Lift
Once the SPLEURATOR® has been inserted as far as the photo shows, simply apply leverage to lift the membrane. Repeat the operation on nearby bones or where the pleura still needs to be detached.

3 - Separa

At this point it is possible to separate the pleura from the rib flap by using the SPLE URATOR® to hold the flap still while pulling the pleura with the other hand.
